Gado-gado typically
originated in Java. In Central and East Java, the peanut sauce is cooked with
spices and coconut milk. The ingredients for gado-gado include slices of
lontong (steamed rice cake wrapped in banana leaves) with long green beans,
bean sprouts, cucumber, potato, fried tempeh and tofu, boiled egg, plus crushed
shrimp crackers.
Another typical Betawi flavor is kerak telur (egg crust), which is made of egg,
serundeng (shredded coconut mixed with spices fried without oil) and glutinous
rice. This is a kind of spicy omelet topped with fried shallots and dried
shrimps, which is grilled in a small pan on top of burning charcoal.
